Salads are always a go-to in the summer for us. Not only are they super nutritious and a easy way to get in your greens, but they’re also super refreshing! In the winter, cold food doesn’t always sound appetizing, so it can be difficult to get yourself to want a salad. But adding in a warm grain makes all the difference!

This quinoa salad is full of flavor, while being super nutritious, and the best part is, you can customize it to your liking!


The Salad

1 cup cooked quinoa

1/2 cup grape tomatoes. halved

1/2 a large cucumber, diced

1/4 of a red onion, chopped

1/2 a large avocado

1/4 cup cilantro

The Dressing

1/2 Tbsp red wine or balsamic vinegar

1/2 Tbsp lime juice

1/2 Tsp dijon mustard

1/2 garlic clove, minced

Salt to taste

Add water until you reach your preferred consistency

After you’ve tossed all the salad ingredients together, and mixed the dressing ingredients, there’s only two things left to do.

Pour the dressing over the salad, and enjoy!

You can either wait for the quinoa to cool down and enjoy the salad chilled, or if you’re feeling something more comforting, keep it warm. It’s delicious either way.
