Fish Tacos with Creamy Lime Guacamole and Cabbage Slaw

While the emphasis for a healthy lifestyle typically focuses on fitness, it’s actually your nutrition that makes the biggest difference. Nutrition is 80% of creating and sustaining successful weight loss, and exercise is only 20%.

Our first recipes of the year goes hand in hand with one of the small steps we talked about to lasting change.

It’s not such a drastic change in your diet that you won’t enjoy it, but it’s packed full of protein to keep your energy up and your hunger down. Not only that, but it’s also super easy to make, and when you’re constantly on the go, there’s nothing better than something delicious, nutritious, and quick!

Fish tacos make us think of summer, which is something that is much needed when we step outside into the winter cold!

Instructions

Step 1: Light a grill. In a medium bowl, mash the avocados, sour cream, jalapeño, red onion, cilantro and 3 tablespoons of the lime juice. Season the guacamole with salt and pepper (to taste) and press a piece of plastic wrap directly onto the surface of the guacamole.

Step 2: In a large bowl, toss the cabbage with the 2 tablespoons of vegetable oil and the remaining 2 tablespoons of lime juice. Season with salt and pepper.

Step 3: Brush the fish with oil and season with salt and pepper. Grill over moderately high heat until lightly charred and cooked through, about 10 minutes. Transfer the fish to a platter and pull off the skin.

Step 4: To assemble each taco, spread a dollop of guacamole on a tortilla. Top with a piece of fish, a few tomato slices and a large spoonful of the cabbage slaw. Serve with hot sauce and lime wedges.

And of course, you can always switch out any veggies or other toppings for ones that you enjoy more!
